Method

  1. It measures 70 ml of cold water with its own cup and pour it in the cezve. Add 7 g of extra fine ground coffee (a teaspoon filled) and sugar, if you want.

Sade, without sugar; az şekerli, little; orta, half; şekerli, sweet. The sugar is now decided: then it is no longer removed.

  2. Removes well in cold until the coffee sinks and does not remain grumpy. From here on, don't move again.

  3. Put the cezve on very low heat and heat slowly, between 2 and 4 minutes, without boiling.

    3 min

  4. When the foam comes up and thickens, before it boils, remove it from the fire. Spread some foam in the cup with a spoon.

  5. Pour the rest slowly and from low height to keep the foam.

  6. Let it rest for 1 minute so that the pose will settle. Serve it with a glass of water and, if you have, a piece of Turkish delight. Don't drink the bottom.

Tips and warnings

  • The milling has to be extra-fine, like flour or sugar glas. Many toothmills do not arrive: buy ground coffee for Turkish ("Türk kahvesi").
  • If it boils, the foam disappears and the coffee is bitter: the very low fire is the key.
  • According to a Turkish proverb, a cup of coffee is remembered for forty years.
  • No cezve: the smallest and narrowest spleen you have is the same.
  • The metal handle is heated: hold it with a cloth.

One last thing

Slow-forming foam, sediment at the bottom and forty years of memories. We’ll remember your Ko‑Fi for just as long.
