Summary
Korean sweet potato noodles stir-fried with colourful vegetables, mushrooms, beef and egg, dressed with soy sauce, sugar and sesame oil. Glossy, springy and good hot or at room temperature.
Ingredients
- 2 u Egg
- 5 tablespoons Soy sauce
- 1 u Onion (thinly sliced)
- 3 cloves Garlic (chopped)
- 1 u Carrot (in thin matchsticks)
- 200 g Spinach
- 1 tablespoon Sesame seeds (toasted)
- 2 tablespoons Sugar
- 2 tablespoons Vegetable Oil
- 1 u Red Pepper (in strips)
- 3 tablespoons Sesame Seed Oil
- 6 u Shiitake Mushrooms (sliced)
- 200 g Beef Flank Steak (in thin strips)
- 250 g Sweet potato noodles (dangmyeon)
Instructions
Mix the soy sauce, sugar, 2 tablespoons of sesame oil and the garlic. Marinate the beef in 2 tablespoons of this sauce.
10 min
Cook the noodles according to the packet, drain, rinse in cold water and snip them a couple of times with scissors. Toss with a tablespoon of the sauce.
8 min
Blanch the spinach for a minute, squeeze it dry and dress it with a few drops of sesame oil. Beat the eggs, make a thin omelette and slice it into strips.
5 min
In a frying pan with a little vegetable oil, stir-fry the onion, carrot, pepper and mushrooms separately, each with a pinch of salt, just until tender.
10 min
Stir-fry the beef over high heat until cooked. Add the noodles and the rest of the sauce and toss until glossy.
4 min
In a large bowl, toss the noodles with all the vegetables and the rest of the sesame oil. Serve topped with the egg strips and sesame seeds.
Notes
Sweet potato noodles (dangmyeon) are clear and very springy; they are sold in Asian shops. Each vegetable is stir-fried separately so it keeps its colour. Without the beef and egg it is a vegan dish. It is often served at celebrations, as a side or a main.
