Summary

The no-bake spoon dessert from the Veneto: layers of ladyfingers dipped in coffee and a mascarpone and egg cream, finished with bitter cocoa. No oven needed, just a few hours in the fridge.

Ingredients

8 servings
Add to Bring!
  • 4 u Egg (very fresh, separated)
  • 1 pinch Salt (for the egg whites)
  • 100 g Sugar
  • 500 g Mascarpone (chilled)
  • 2 tablespoons Cocoa Powder (unsweetened, for dusting)
  • 300 ml Coffee (strong espresso, cooled)
  • 300 g Sunflower biscuits

Instructions

  1. Make the coffee and let it cool completely in a shallow dish. If it is hot, the biscuits will fall apart.

    10 min

  2. Whisk the yolks with the sugar until pale and foamy. Add the cold mascarpone and whisk on low speed just until smooth; overbeat it and it will split.

    5 min

  3. In a clean bowl, whisk the egg whites with the pinch of salt to stiff peaks. Fold them into the cream in two batches with a spatula so they keep their air.

    5 min

  4. Dip the ladyfingers one at a time into the coffee, just a moment on each side, and use them to cover the base of a dish of about 20 × 30 cm.

    5 min

  5. Spread half the cream over the top. Repeat with another layer of dipped biscuits and finish with the rest of the cream, smoothing the surface.

    5 min

  6. Cover the dish and chill for at least six hours, ideally overnight. Just before serving, dust with the cocoa through a fine sieve.

    6 hr

Notes

As the recipe uses raw egg, use very fresh or pasteurised eggs. If you prefer, cook the yolks with the sugar in a bowl over simmering water, whisking until they reach 70 °C, before adding the mascarpone. The classic version contains no alcohol, though many families add a splash of Marsala, rum or amaretto to the coffee. Don't soak the biscuits: a second on each side is enough. It keeps for two days in the fridge, well covered.
