Summary

Little bites of condensed milk and cocoa cooked slowly, rolled into balls and coated in chocolate sprinkles. The sweet no Brazilian birthday party is without, made with very few ingredients, about 20 per batch.

Ingredients

10 servings
Add to Bring!
  • 20 g Butter (plus a little extra for your hands)
  • 1 pinch Salt
  • 395 g Condensed Milk (one tin)
  • 2 tablespoons Cocoa Powder (unsweetened)
  • 100 g Chocolate sprinkles (for coating)

Instructions

  1. Put the condensed milk, sifted cocoa, butter and salt in a non-stick pan and mix them before heating until there are no lumps of cocoa.

    2 min

  2. Cook over a medium-low heat, stirring constantly with a silicone spatula and scraping the bottom and corners. The mixture will gradually thicken: it is ready when you can see the bottom of the pan for a couple of seconds after dragging the spatula through and the mixture moves as one mass.

    12 min

  3. Tip it onto a buttered plate, cover with cling film pressed onto the surface and leave to cool to room temperature; then chill it for a while so it is easier to handle.

    60 min

  4. Rub a little butter on your hands, take portions of about 15 g and roll them into balls. Roll them in the chocolate sprinkles and put them in paper cases.

    20 min

Notes

They appeared in Brazil in the 1940s and are named after Brigadier Eduardo Gomes, a presidential candidate whose campaign events handed them out. Everything depends on the setting point: to roll them, cook the mixture until you can see the bottom of the pan for a couple of seconds when you drag the spatula through; cook it less and you get spoonable brigadeiro to eat from little pots. Overcook it and they turn hard and chewy. Instead of chocolate sprinkles you can use grated chocolate or cocoa; the version made with desiccated coconut and no cocoa is called beijinho. They keep for 4 days in the fridge, covered, and can also be frozen.
