Summary
Pork skewers marinated in lemon, garlic and oregano, grilled and served in pitta with tzatziki, tomato and red onion. Greece's best-loved street food.
Ingredients
- 2 u Tomato (in wedges)
- 4 cloves Garlic (chopped)
- 2 u Lemon (juice and zest of one, the other in wedges)
- Salt (to taste)
- Black pepper (to taste)
- 1 u Red Onions (thinly sliced)
- 5 tablespoons Extra Virgin Olive Oil
- 250 g Greek Yogurt (for the tzatziki)
- 2 teaspoons Oregano (dried)
- 700 g Pork Shoulder (or loin, in 3 cm cubes)
- 0.5 u Cucumber (grated and squeezed)
- 4 u Pita Bread
Instructions
Mix 4 tablespoons of oil with the lemon juice and zest, three garlic cloves, the oregano, salt and pepper. Marinate the pork in the fridge for at least 2 hours or overnight.
For the tzatziki, mix the yogurt with the squeezed cucumber, the remaining garlic, a tablespoon of oil and salt.
5 min
Thread the pork onto skewers and cook them on a very hot grill or griddle, turning, until browned outside and juicy inside.
12 min
Warm the pittas on the griddle, brushed with a little oil.
3 min
Serve the pork in the pittas with the tzatziki, tomato, red onion and lemon wedges.
Notes
If you use wooden skewers, soak them for half an hour so they do not burn. Shoulder or loin with a little fat stays juicier than tenderloin. In Athens it comes with a few chips tucked into the pitta; make the tzatziki with Cocinoa's recipe or with the yogurt, cucumber and garlic listed here.
