No Phin vietnamita? This works too
Method
If you want it with milk, put 25 g of condensed milk in the bottom of the glass.
Place the phin on the glass and make 18 g of medium-fine ground coffee. Shake to level and put on the press disk, pressing barely.
Pour about 25-30 ml of water at 96 ° C to wet the coffee and wait between 30 and 40 seconds.
Fill the phin up to 110 ml of water in total, put the cap and let drip between 4 and 6 minutes.
5 min
If a quick jet falls, grind or tighten the disk a little more; if it does not drip, flatter it.
Remove the phin and leave it on your back cover. Remove with condensed milk and serve; to take it cold, pour it on an ice glass.
Tips and warnings
- In Vietnam it is used mainly robust, bitter and with a lot of body; with arabic it comes out softer and more acid.
- The phin and the glass are warm: hold them carefully when you remove it.
- Without phin: an AeroPress with little water or an Italian coffee maker give a similar concentrated coffee.
One last thing
The phin drips slowly onto the condensed milk. If it’s brightened up your day, why not brighten ours with a Ko‑Fi?
