Summary
The Osaka-style Japanese cabbage pancake: a light batter packed with shredded cabbage and pork belly, browned in the pan and topped with okonomiyaki sauce, mayonnaise, bonito flakes and spring onion.
Ingredients
- 100 g Wheat flour
- 2 u Egg
- 1 teaspoon Soy sauce (for the sauce)
- 1 pinch Salt
- 1 teaspoon Sugar (for the sauce)
- 1 tablespoon Vegetable Oil
- 6 slices Pork belly slices (thin)
- 3 u Spring Onions (chopped)
- 2 tablespoons Tomato Ketchup (for the sauce)
- 2 tablespoons Worcestershire Sauce (for the sauce)
- 2 tablespoons Mayonnaise (Japanese if possible)
- 300 g White cabbage (very finely shredded)
- 120 ml Dashi stock (cold, or water)
- 1 handful Bonito flakes (katsuobushi) (katsuobushi)
Instructions
Mix the ketchup, Worcestershire sauce, soy sauce and sugar to make the sauce.
Whisk the flour with the cold dashi and salt until smooth. Add the eggs and whisk again. Fold in the cabbage and most of the spring onion, mixing gently just until the cabbage is coated.
5 min
Heat the oil in a non-stick frying pan over medium heat, pour in half the batter and shape a thick pancake about 2 cm deep. Lay 3 slices of pork belly on top.
2 min
Cook, covered, until the base is golden. Flip it with the help of a plate and cook the pork side until crisp and the centre is set. Repeat with the other half.
18 min
Serve with the sauce spread over the top, lines of mayonnaise, the bonito flakes and the remaining spring onion.
Notes
Okonomi means "whatever you like": prawns, squid, cheese or mushrooms can replace the pork. Okonomiyaki sauce is sold bottled; this homemade version with ketchup, Worcestershire and soy comes very close. The dried bonito flakes (katsuobushi) dance in the heat, which is part of the show.
