Enough coffee for three or four cups, very clean and with a texture almost like tea, thanks to the Chemex’s coarse filter.

The pour

Watch the scale, not the clock: each mark is the total weight in the server.

  1. 0:00100 g · Bloom
  2. 0:45300 g
  3. 1:30500 g
  4. 2:15750 g
  5. The drawdown ends around 4:15

Method

  1. Heat water at 94 ° C Open the filter with the three-layer part to the peak and rinse it well with hot water. Drop that water without removing the filter.

The three layers towards the peak prevent the paper from covering it and let the jar breathe.

  2. It grabs 50 g of coffee to medium-thick, thicker than for V60: Chemex's paper is thick and filters slowly. Put it down, level it and put the scale to zero.

  3. Bloom (0: 00): pour 100 g of water wet all the coffee and wait 45 seconds.

  4. Grain up to 300 g at 0: 45 and up to 500 g at 1: 30, keeping the water at half the height of the cone.

  5. Last released at 2: 15: complete up to 750 g.

  6. Let it filter until the bed is almost dry, between 4: 00 and 4: 30 in total.

    2 min

If it takes more than 5 minutes, it grabs thicker next time.

  7. Remove the filter, turn the pitcher to mix and serve immediately.

Tips and warnings

  • If it comes down in less than 4 minutes and tastes loose, it grinds more thin.
  • Chemex filters (€10-15 the 100, guidance package) are responsible for your clean cup.
  • No Chemex: a large cone with paper filter on a pitcher, or a drip coffee maker, with 50 g coffee per 750 g water.
  • The hot glass slips: hold the Chemex by the wooden necklace.

One last thing

A Chemex makes four cups; if you have one left over, we’d be delighted to accept it via Ko‑Fi.
