Chemex
Glass jar with sand watch and thick filter. Very clean coffee, almost like a tea, to share.

- Medium-coarse
The Chemex is a one-piece glass jar with a wooden waist tied with a cord. It is both a cone and a pitcher to serve. Its paper filter is thicker than that of other cones: it retains more fine oils and particles and slows the passage of water.
That is why it is appropriate to grind something thicker, in medium-thicker. For 3-4 cups: 50 g coffee and 750-800 g water at 93-96 ° C. Rinse the filter, place it with the three-layer part towards the peak, make a bloom of about 100 g for 45 seconds and continue to pour for tandas. It should end between 4 and 4: 30.
- In favor: very clean, light and aromatic cup.
- In favor: beautiful on the table and perfect for several people.
- Against: your filters are expensive and not always easy to find.
- Against: the glass is fragile and the neck costs to clean.
The size of 6 cups is the most versatile and costs €45-60; filters, €10-15 the 100 package. There are smaller and larger versions. Check for your wooden necklace: protect your hands from heat.
Cheapest alternative: a V60 or a Melitta cone on a single pitcher give a similar cup, something less clean.
This coffee bar runs on coffee… literally. And the odd ko‑fi.
