The pour

Watch the scale, not the clock: each mark is the total weight in the server.

  1. 0:0050 g · Bloom
  2. 0:30100 g
  3. 0:55150 g
  4. 1:20200 g
  5. 1:45250 g
  6. 2:10300 g
  7. 2:35355 g
  8. The drawdown ends around 3:15

Method

  1. Heat water at 95 ° C. Place the wavy filter in the Kalita and rinse it by pouring out the center, without crushing the waves. Drop that water.

  2. It grabs 21 g of coffee to medium milling, like sand. Put it down, shake to level and put the scale to zero.

  3. Bloom (0: 00): pour 50 g of water into small circles and wait about 15 seconds after finishing.

  4. At 0: 30, pour up to 100 g. It still has 50 g spills every 25 seconds: 150 g at 0: 55, 200 g at 1: 20, 250 g at 1: 45 and 300 g at 2: 10.

Pour always in circles in the center, without touching the walls.

  5. Last released at 2: 35: complete up to 355 g.

  6. Let me finish filtering; the total should be between 3: 00 and 3: 30. Turn the pitcher and serve.

If it takes much longer, it grabs thicker next time.

Tips and warnings

  • The flat bottom with three holes gives out the water in a very uniform way: it is more difficult to go wrong than in a cone.
  • The waved filters (€8-12 per 100, guidance) are specific; do not change them for others.
  • Without Kalita Wave: a V60 or a Melitta cone with the same recipe; in the V60, it grabs a finer point because it filters faster.
