A laboratory method: steam pushes the water upwards, the coffee is brewed at the top and the vacuum draws the filtered coffee back down. A very clean and aromatic cup.

Method

  1. Place the filter, fabric or paper, on the top funnel and hook the chain well at the base of the tube.

If it is made of fabric, keep it wet in the refrigerator between uses and rinse it before.

  2. Pour 300 g of hot water into the lower balloon and dry well the outside. Turn on the burner under.

The wet glass in contact with the flame can be broken.

  3. When it starts to boil soft, it fits the funnel straight and firm. The water will almost all go up to the funnel.

  4. Put it down to the minimum to keep a soft boil. Add 20 g of medium-fine ground coffee and remove until everything is wet.

  5. Let the low flame infuse between 1: 00 and 1: 30.

    1 min

  6. Turn off the fire and gently remove about 5 laps. The coffee will be leaked down to the lower balloon in 30-45 seconds.

If it takes much longer to get down, it grabs thicker next time.

  7. Remove the funnel carefully and serve from the lower balloon.

Tips and warnings

  • The glass, burner and funnel burn: use a cloth and don't touch the balloon with your hands.
  • With a butane burner (€30-60, guidance) you control the heat better than with the alcohol lamp.
  • If you use alcohol lamp, fill it without spilling and turn it off with your lid, never blowing.
  • No siphon: an AeroPress or a Clever Dripper with the same proportion give a clean infusion, though without the show.

One last thing

Fire, emptiness and a touch of laboratory magic. The final step in the recipe is a Ko‑Fi.
