Method
Rinse the paper filter into the V60 with hot water over the sink. Put 150 g of ice in the jar and put the V60 on top.
Heat water at 94 ° C It grabs 25 g of coffee a finer than usual for V60: there is less hot water and you need to extract the same.
Bloom (0: 00): pour 50 g of water and wait 40 seconds.
Pour spiral to 125 g at 0: 40, to 175 g at 1: 15 and to 225 g to 1: 45.
Let it filter; it should end between 2: 30 and 3: 00. Turn the pitcher so the ice will finish cooling the coffee.
It serves in a high glass on new ice.
Tips and warnings
- The total proportion is 1: 15 counting ice as water: 225 g hot and 150 g ice.
- It shines with washed cafes of citric or floral profile.
- Filtered water ice: everything the ice carries ends up in your glass.
- Without V60: a Kalita Wave or a Chemex with the same amounts; in Chemex, it grinds a little thicker.
One last thing
Hot when brewing, cold when serving. If the afternoon has been a bit chilly, a Ko‑Fi will warm our spirits.
