A cold brew pitcher is a container with a fine filter or a mesh basket inside. The very thick ground coffee is left in cold water or time between 12 and 24 hours. The filter is then removed and a soft, achocolated drink is left with very little acidity.
You can make it ready to drink, with 60 g of coffee per 500 g of water, or as a concentrate, with 100 g per 500 g, and then dilute it to equal parts. In the refrigerator, between 12 and 24 hours; at room temperature, 12-18. More than 24 hours you can leave notes in wood. Already filtered, hold 7-10 days in the refrigerator.
- In favour: almost no work and no heat.
- In favour: it is prepared for several days.
- Against: you have to plan one day in advance.
- Against: he loses the most fruity and floral notes of coffee.
A Hario Mizudashi costs €25-35; a Toddy system, which makes concentrated in quantity, €40-60. See that the filter is fine and easy to clean and that the jar is on the refrigerator door.
Cheapest alternative: a glass jar, a fine colator and a paper filter. It costs almost nothing and the result is the same.
This coffee bar runs on coffee… literally. And the odd ko‑fi.
