The Swiss Water method removes caffeine using water and coal filters. It does not use chemical solvents, so it is compatible with organic coffee.

The principle is simple to explain:

  • The green coffee is soaked in a water already loaded with soluble compounds of the coffee, except caffeine.
  • As the water is already "full" of taste, the grain comes out above all caffeine.
  • Coal filters retain caffeine and water is reused.

The method announces a caffeine-free coffee at 99.9%. In the European Union, a roasted decaffeinated should be around 0,1% caffeine or less.

In the cup, a good Swiss Water is clean and nice, though something more off than the original coffee.

It's a good choice if you're looking for a solvent-free decaf. Treat it like any specialty coffee: move it right before, use quality water and adjust the milling calmly, because decaffeinated sometimes ask for small changes.

This coffee bar runs on coffee… literally. And the odd ko‑fi.
