Method
Prepare a 3-cup Italian coffee maker (recipe "Italian coffee maker (moka)") and put it over medium heat.
Never fill the tank above the valve.
In the meantime, put 2 tablespoons of brown sugar in a jar.
As soon as the first drops of coffee come out, pour 1-2 teaspoons on the sugar and put the coffee maker back on fire.
Bat with a spoon, with energy, until it has a pale and thick paste: the foaming. It takes a minute or two.
When the coffee maker is finished, pour the rest of the coffee little by little over the foam, removing.
The foam will go up to the surface alone.
Tips and warnings
A "laundry" is this same coffee served in a glass to share, with cups for 3-6 people. In Miami it is asked for the "little windows" of Cuban cafés.
- With a chorrito of vaporized milk it becomes "Cutadito.".
One last thing
A laundry is shared with everyone. This ko‑fi, if you want, share it with me alone.
