Method
Prepare the machine as for an espresso (espresso recipe): purge the group, dosify 18 g, distribute and level apisone.
Adjust the mill a finer point than for your usual espresso.
It only extracts 18-27 g of drink in 15-25 seconds, a ratio of 1: 1 to 1: 1.5.
If it comes out sour, it fins a little more; if it is rough, it goes up to 1: 1.5.
Serve it in a cup of pre-heated espresso and take it right away.
Tips and warnings
A ristretto stays with the sweetest and denser part of the extraction. The Italian coffee maker or the AeroPress do not reach this concentration: it is a thing of espresso machine or a portable espresso.
One last thing
The good, if short, twice good. So I'll be brief: a ko‑fi?
