- Italian coffee maker (moka)€20–60The life-long stove coffee maker: the steam pushes the water through the coffee. Intense, with body and very cheap.

Method
Prepare a double espresso of 30-40 ml ("Espresso" recipe) in a large pre-heated cup.
Heat 100-150 ml of milk up to 55-65 ° C with a little foam, without boiling.
After 70 ° C, milk loses sweetness and tastes like cooked.
Pour the milk over the coffee in a continuous jet. Start with 1: 2 and adjust to 1: 4 if you want it softer.
Taste to taste, remove and serve.
Tips and warnings
According to Square data of 2024, eight out of ten Spaniards add milk to their coffee.
- "stained milk": a lot of milk and just a touch of coffee.
- In Malaga, the "shadow" is almost all milk, with just a shade of coffee.
- No machine: use Italian coffee coffee; the result is more intense and with more body.
One last thing
Half and half, a lot of milk or stained? We don't judge here. A ko‑fi, on the other hand, always comes to its point.
