Method
Vaporiza 200-250 ml of milk up to 55-65 ° C, with a good layer of foam.
Pour it into a high glass and let it rest about 30 seconds so that the foam will separate up.
Prepare an espresso of about 30 ml ("Espresso" recipe) in a jar.
Pour the espresso very slowly in the center, passing the foam: it will stay between the milk and the foam, forming three layers.
The hotter and more airy the milk, the more clear the layers.
Serve it with long spoon and remove it to taste.
Tips and warnings
No vaporizer: it heats milk in a bowl without boiling it and spurs it with a hand foam; the layers come out equally pretty.
One last thing
Three layers of patience in high glass. The fourth, if you like, is a kopfi.
