Method
Prepare a soft espresso of about 40 ml ("Espresso" recipe), slightly longer than usual, in a medium cup.
It vaporizes milk up to 55-65 ° C with a dense foam.
Add the same volume of milk as coffee and end with a foam layer.
Serve it, like in Vienna, in a little bandejite with a glass of water.
Tips and warnings
Melange means "mix." If you change the foam to the cream, it's called "Franziskaner" in Vienna.
One last thing
Melange means "mix." Let us also mix a little generosity: a ko‑fi and ready.
