Sulawesi is another of Indonesia's large coffee-making islands, and its best-known coffee comes from Toraja and Kalosi. It grows between 1,200 and 2,100 m and is harvested more or less from May to November.
As in Sumatra, the usual process is wet husbandry. But the cup is usually cleaner: it keeps the notes of spices and herbs, with generous body and low acidity, and less ground.
- Toraja and Kalosi: the two names you'll see in the bags.
It's a good intermediate step if you like the body of Indonesian cafes but you're looking for something more polished. It works in French press, moka and espresso, alone or with milk.
A city + or full city keeps its spices and softens the end. If you compare it to a Sumatra of the same tueste, you'll see how two islands with the same process can give such different cups.
