Varieties
Castle
The variety of work of Colombia: created by Cenicafé in 2005 to resist the roya, with a clean cup of citrus and caramel.
In the cup
- Citrus
- Caramel
Castillo is the most important variety in Colombia. It was presented by Cenicafé, the country's coffee-making research centre, in 2005, from a lineage of Caturra and the Hybrid of Timor.
Its great virtue is roya resistance, the fungus that attacks the leaves of the caffeto and can ruin a harvest. Thanks to it, many Colombian farms were able to renew their cafes.
Some caters looked at it in the beginning with suspicion, like other varieties with blood from the Hybrid of Timor. But well grown in height and well processed, it gives a clean and pleasant cup: citrus, candy and medium acidity.
- Lineage: Capture × Hybrid from Timor.
- Root resistant.
- High productivity.
It is likely that many Colombian cafes you have had were Castillo, even if the label did not say so. Prepare it in V60, drip or espresso coffee maker, with your own city.
This coffee bar runs on coffee… literally. And the odd ko‑fi.
