In Ethiopia there is not a dominant variety, but thousands. The cafes mix wild plants, local types and research selections. Tenders group them as Ethiopian landmarks, and the bags usually say simply "heirloom."
Part of this mixture comes from selection of the Jimma Agricultural Research Centre (JARC), with codes such as 74110 and 74112. Others are local types with their own name, such as Kurume or Wolisho.
In the cup they explain the fame of Ethiopian coffee: floral notes, citrus notes and berries. A Yirgacheffe wash tastes like jasmine and lemon; a Guji natural, cranberry and strawberry.
- Origin: Ethiopia, the cradle of the Arabic.
- Thousands of local guys, not just one floor.
- Famous varieties such as Geisha, Sidra or Pink Bourbon seem to come from this genetic background.
Prepare these cafes in V60, Chemex or Kalita with clear weave. And if you want to try something traditional, in a jebena.
This coffee bar runs on coffee… literally. And the odd ko‑fi.
