Uganda has a special relationship with the robust one: the species grows wild in its forests, and is now grown in almost the whole country. It is one of the world's great exporters of robust.
But there is also arabic, and very good. It grows on the slopes of Mount Elgon, in the region of Bugisu, between 1,300 and 2,300 m, and on the Rwenzori mountains. The harvest of the arabic goes more or less from October to February.
- Bugisu (Mount Elgon): washed with chocolate, berries and citrus.
- Rwenzori: mountain arabics in the west.
- The natural arabic is sold as "Drugar."
The robusta provides chocolate, cocoa, little acidity and a lot of body. It is ideal for giving cream and strength to a mixture of espresso.
For the Arábica of Bugisu, try a city in V60 or AeroPress. For the robust, think of espresso, moka or phin, and maybe a little condensed milk.
